When you’re camping, breakfast sets the tone for the whole day, or at least it does for me. You want meals that are quick, hearty, and use simple ingredients you probably already have on hand. 👉 Note: Every one of these recipes can be made in a regular skillet over your camp stove or fire grate. If you have a Blackstone™ griddle, it works perfectly for these recipes too.

Sunrise Skillet Wraps

Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheddar cheese (or a blend)
  • 1 cup cooked breakfast sausage or diced ham
  • 1 small onion, chopped (optional)
  • 1 bell pepper, chopped (optional)
  • Salt and pepper to taste
  • Cooking spray or 1–2 tbsp oil

Directions

  1. Place a skillet on medium heat (or use a Blackstone™). Spray with cooking spray or add a little oil.
  2. Crack eggs into a bowl, whisk with a fork, then pour into skillet. Stir gently with a spatula until eggs are soft-scrambled (about 3–4 minutes). Remove from skillet and set aside.
  3. In the same skillet, add sausage/ham and optional onion/pepper. Cook 3–5 minutes, stirring occasionally, until meat is heated through and vegetables are softened.
  4. Warm tortillas one at a time in the skillet for 20–30 seconds per side until pliable.
  5. To assemble: Place scrambled eggs, sausage mixture, and cheese in the center of each tortilla. Fold sides in, then roll up into a wrap.
  6. Serve warm. Wraps can be eaten immediately or wrapped in foil to stay warm for later.

Morning Bliss Parfait

As many of you know, I love using Mason jars for everything, both at home and on camping trips. I also love to make parfaits, so this was a smart choice for me to make these-not just for breakfast but for any time of the day snack. Bonus, our grandkids love parfaits too!

Ingredients

  • 4 small mason jars or cups
  • 2 cups vanilla or plain yogurt
  • 2 cups granola
  • 2 cups canned peaches (drained and chopped) or fresh fruit
  • 2 tbsp chopped pecans or almonds
  • 2 tbsp honey (optional)

Directions

  • Place 2–3 spoonfuls of yogurt in the bottom of each mason jar. We also share Mason Jar Camping Hacks for snacks and meal prep uses- not just for breakfast.
  • Add a layer of fruit (about 2–3 spoonfuls).
  • Add a layer of granola (about 2 spoonfuls).
  • Repeat layers until jars are nearly full.
  • Top each parfait with nuts and a drizzle of honey if using.
  • Serve with a spoon.

Cinnamon Apple Foldovers

Ingredients

  • 2 cans refrigerated crescent roll dough or biscuit dough (pre-separated pieces)
  • 1 can apple pie filling (about 20 oz)
  • 2 tbsp sugar mixed with 1 tsp cinnamon
  • Cooking spray or butter

Directions

  1. Spray skillet with cooking spray and heat on medium (or use a Blackstone™).
  2. Roll out dough pieces into flat rectangles or circles.
  3. Place 2–3 spoonfuls of apple pie filling in the center of each piece.
  4. Fold the dough over the filling to form a pocket, sealing the edges by pressing them with a fork.
  5. Place foldovers in the skillet. Cook 3–4 minutes per side, until golden brown.
  6. Remove carefully and sprinkle with cinnamon-sugar mixture while warm.
  7. Serve hot with camp coffee or milk.

Hearty Bean & Egg Tacos

These may not sound like your typical breakfast, but trust me — they’re hearty, quick, and perfect for fueling a busy camping day. My favorite twist is using refried beans instead of whole beans; it changes the flavor completely and adds a cozy, comfort-food vibe. Bean and egg tacos are one of Doo Doo’s favorite breakfast tacos.

Ingredients

  • 8 small flour or corn tortillas
  • 6 large eggs
  • 1 can black beans (or substitute pinto beans), drained and rinsed
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 small jar of salsa (mild or medium)
  • Salt and pepper to taste
  • Cooking spray or oil

Directions

  • Place a skillet over medium heat (or use a Blackstone). Spray lightly with cooking spray or add 1 tbsp oil.
  • Crack the eggs into a bowl, whisk them with a fork, and pour the mixture into a skillet. Cook, stirring often, until eggs are firm but soft (about 3–4 minutes). Remove from the skillet and set aside.
  • In the same skillet, add the beans with 2 tablespoons of water. Cook for 2–3 minutes, stirring occasionally, until heated through.
  • Warm the tortillas in a skillet for 15–20 seconds per side.
  • Assemble tacos: Place beans on a tortilla, add scrambled eggs, sprinkle cheese, and top with salsa.
  • Fold and serve warm.

Sausage & Egg Biscuit Stacks

These may not be the most original breakfast, but they’re always a hit in our family. Warm, satisfying, and easy to grab-and-go, they’re perfect for a one-handed meal on a busy camping morning. Everyone has their own twist — some swap sausage for bacon, others change up the cheese. We usually go with cheddar or thin-sliced pepper jack, though gouda or white cheddar make them feel extra special. And one of our grandkids even insists on adding jelly — proof that these little stacks can be customized for anyone’s taste.

Ingredients

  • 4 large biscuits (baked at home before camping)
  • 4 cooked sausage patties
  • 4 fried or scrambled eggs
  • 4 slices of cheddar cheese

Directions

  • Slice each biscuit in half horizontally. Place the bottom half on a serving plate.
  • Place one sausage patty on the bottom half of each biscuit.
  • Top sausage with one egg (fried or scrambled).
  • Place one slice of cheese over the egg.
  • Add the biscuit top to complete the sandwich.
  • To reheat at camp, wrap each sandwich in foil and warm it in a skillet or over a low fire for 5–7 minutes, until the cheese is melted and the sandwich is hot throughout. If you use your RV oven, you can make these from scratch.
